Apple Cider Vinegar |
|
Not your average Apple Cider vinegar. Sun-ripened apples grown in South Canterbury New Zealand are cold pressed and fermented without the usual subsequent processing that can remove valuable nutrients. Because of this the product will darken or cloud over time and the natural mother of vinegar may reform but the product remains perfectly usable and the sediment you see is intentional. Perfect for salad dressings, marinades, chutneys and pickles. 4% Acidity. 750mls. |

Mustard Vinaigrette |
|
1 tablespoon finely minced spring onion 1 teaspoon dry mustard ¼ teaspoon dry granulated garlic ¼ cup apple cider vinegar ¾ cup olive oil sea salt and freshly ground pepper to taste |
In a small mixing bowl whisk the spring onion, mustard, salt, pepper and vinegar. Add olive oil and whisk until emulsified. Adjust seasonings to taste. Keeps for 1 day in the refrigerator. Makes 1 cup. |

Cucumber Pickle |
|
2 Cucumbers - Sliced 2 Onions – peeled and sliced 1/3 cup salt 2 Cups TasteMaker Cider Vinegar 2 Cups sugar 1 ½ Teaspoons tumeric 1 Teaspoon celery seeds 1 Tablespoon mustard seeds |
Place the sliced cucumbers and onions into a bowl, sprinkle with the salt, cover with cold water and leave overnight. Put the cider vinegar and sugar into a saucepan and add the tumeric, celery and mustard seeds. Bring to the boil and stir till sugar dissolves. Add the drained cucumber and onions and bring back to the boil. Remove from heat and spoon into sterilised jars. Use jars with a rubber seal and screw lids on tightly. Ready in one week. Refrigerate after opening. |

Drink it: Mix with water to create a refreshing drink Fresh fruit: add some apple cider vinegar to a bowl of water holding cut fruit as it will help prevent the fruit from discolouring and going brown. A small amount of apple cider vinegar added to cooking water will help prevent egg shells cracking and enable easier and faster shell removal. A small amount of apple cider vinegar added to cooking water will help prevent separation of yolks and whites when poaching eggs. A teaspoon of apple cider vinegar added to cooking water will make fluffier rice. Flavourful fruit: when cooking fruit, try adding a spoonful of apple cider vinegar to improve and enhance the flavour. Healthy ham: to prevent mould, rub apple cider vinegar on the cut end of uncooked ham. Apple cider vinegar can also be added to boiling ham, as it can cut the salty taste and improve the flavour. Marinading meat overnight in apple cider vinegar will tenderise it. A teaspoon of apple cider vinegar added to cooking water will help keep your cauliflower white. |
